Ripe, fresh pears and pungent blue cheese make a delicious combination. Grilled, they’re spectacular. Serve as a salad over dressed greens, as part of a cheese course or as a dessert.
4 ripe but somewhat firm Bartlett 4
or Bosc pears (unpeeled),
halved lengthwise
Melted unsalted butter
1⁄2 cup Gorgonzola or other creamy 125 mL
blue cheese
Liquid honey
Toasted chopped hazelnuts
1. Prepare a hot indirect fire in your grill.
2. Using a melon baller, core and scoop out a small cavity in each pear half. Brush both sides of each pear half with melted butter.
3. Place pears cut side down over the hot fire. Grill for about 2 minutes, or until fruit is blistered. Move to the indirect side of the grill and place skin side down. Mound 1 tbsp (15 mL) cheese in the cavity of each pear. Close the lid and grill for about 8 minutes, or until pears are blistered and cheese is melted. Serve drizzled with honey and garnished with hazelnuts.
Tip: Purple-skinned Bosc pears look fabulous prepared this way.
