Mug Granola (gluten-free friendly)

Mug Granola
"You can buy a tiny pouch of granola for an exorbitant price, or you can make a single serving any time, any way you like it, for a few cents at home. You can tweak this basic recipe with whatever nuts, seeds or dried fruit suit your fancy. It’s pretty forgiving, so adjust the sweetener and salt ? a bit more, a touch less ? or add a pinch of a favorite spice," says Camilla Saulsbury, author of 250 Best Meals in a Mug.
12- to 16-oz (375 to 500 mL) mug, sprayed with nonstick cooking spray
1 tbsp pure maple syrup, liquid honey or agave nectar 15 mL
2 tsp water 10 mL
1 tsp vegetable oil 5 mL
Pinch salt Pinch
1/?3 cup quick-cooking or large-flake (old-fashioned) rolled oats 75 mL
1 tbsp chopped nuts or seeds 15 mL
1 tbsp chopped dried fruit (optional) 15 mL
In the mug, combine maple syrup, water, oil and salt until blended. Stir in oats and nuts until coated.
Microwave on Medium (50%) for 2 minutes. Stir, making sure to stir up any syrup on the bottom of the mug.
Microwave on Medium (50%) for 11?/2 to 21?/2 minutes or until mixture appears somewhat dry. Stir in dried fruit (if using).
Let cool for 2 to 3 minutes (or completely) before eating.
Tips
To make this granola gluten-free, be sure to use oats that are certified gluten-free.
Add 1?/4 to 3?/4 tsp (1 to 3 mL) of any sweet ground spice (cinnamon, ginger, pumpkin pie spice, allspice) with the salt.
For even more flavor, add a few drops of vanilla or almond extract to the syrup mixture, or add 1/?2 tsp (2 mL) finely grated citrus zest (lemon, orange, lime).
Prep Ahead Option
Combine the maple syrup, water, oil and salt in the mug; cover and store at room temperature. Measure the oats and nuts into a small airtight container; cover and store at room temperature until ready to use.
