While all pizzas have their roots in Italy, this mini version practically sings with Italian flavors. And it’s so quick and easy, it makes a perfect afternoon snack or late-night treat.

PREP time: 3 minutes

  • Preheat breakfast sandwich maker

1                     4-inch (10 cm) ready-made pizza crust (see Tips)            1

2 tbsp              pizza sauce                                                                    30 mL

2 tbsp              shredded mozzarella cheese                                         30 mL

1 tbsp              sliced black olives                                                         15 mL

5                     slices small pepperoni                                                           5

1 tbsp              freshly grated Parmesan cheese (optional)               15 mL

Place crust in bottom ring of sandwich maker. Spread pizza sauce over crust. Sprinkle with mozzarella and olives. Arrange pepperoni on top.

Lower the cooking plate and top ring. Close the cover and cook for 3 to 4 minutes or until mozzarella is melted and crust edges are brown.

Rotate cooking plate away from sandwich maker and lift rings. Use a plastic or nylon spatula to remove the pizza.

Let stand for 1 minute to allow mozzarella to set. Sprinkle with Parmesan, if desired.

Serve immediately.

Look for small ready-made pizza crusts and pizza sauce in the Italian or deli section of your grocery store. The crusts come in multiples, often in a resealable bag, so you’ll have more on hand for your pizza cravings.

If you are not able to find small pizza crusts, cut a larger crust into a 4-inch (10 cm) round using a cookie cutter, kitchen scissors or the top of a wide-mouth canning jar ring.
